Walnut and Chocolate Crusted Chicken Breast
Serves 4
Total time: 30 minutes
Ingredients
4 boneless, skinless chicken breasts (pounded to an even 1/2-inch thickness)
1/2 tsp salt
1/4 tsp black pepper
1-1/2 cups finely chopped Smånüts Chocolate Covered Walnuts
1/4 finally grated parmesan cheese
1 tsp thyme
2 Tbsp olive oil
Instructions
Preheat your oven to 375°F. Line a baking sheet with parchment paper or spray it with cooking spray.
Finely chop the chocolate covered walnuts until they resemble coarse breadcrumbs. Combine chopped walnuts with grated parmesan, thyme and salt & pepper in a shallow bowl. Mix thoroughly.
Pat the chicken breasts completely dry with a paper towel. Using a pastry brush, coat the top side of each chicken breast with olive oil.
Press the top side of each oiled chicken breast firmly into the chocolate walnut parmesan mixture. Ensure a thick, even layer sticks to the top surface.
Arrange the coated chicken (coated side up) in a single layer on your prepared baking sheet. Bake for 18 to 22 minutes until golden brown, and the internal temperature registers 165°F. Rest for 5 minutes before serving.
NOTE: Nuts contain natural oils that can burn quickly. If the walnuts begin to darken too much around the 15-minute mark, tent a piece of aluminum foil loosely over the chicken.
